  • Truly authentic identification

    Our identity comes from the Waratah flower, the emblem of New South Wales, and the name of the town, where Ben Brown, our founder and head beekeeper,  was born. .


    Ben's father and grandfather were also beekeepers, with our first hives started in 1918. We now run over 2000 hives..


    We produce honey from the source. All of our honeys are sourced directly from apiaries within Australia. None of our honey is blended with syrups or imported materials. 


    100%  Australian made, each batch is tested to ensure we meet the quality expectations we set for ourselves.


    This includes testing for C4 and AFB, along with MGO, DHA and HMF. All testing is carried out by an independent laboratory, with ISO17025 quality accreditations.

  • Monofloral Manuka Honey

    In Australia, we have access to wild forests of Leptospermum and the honey produced in Australia has the same identical markers as found in New Zealand Manuka honey.


    We are working with the Australian Manuka Honey Association to develop suitable markers for authenticating Australian Manuka to global market requirements.


    Our goals are to uplift and appreciate Australian culture, preserve our forests and give people access to better health.

  • A cultural icon

    The Waratah flower is a cultural symbol, adorning Australian souvenir icons, from stamps to the state flag of New South Wales.


    The root word of Waratah is ‘warada’ from the local aboriginal language, meaning ‘beautiful’ or ‘red-flowering tree’. Our flower is found in the story of the Wonga Wonga pigeons, who flew above the treetops, and the tales of Toonkoo and Ingaardi, the lost hunter & the grieving widow who created the rivers and streams.


    This connection to the deep history of Australian culture is the inspiration for all of us. It is this understanding of the land from which we come that inspires what we do. 


    The golden dot work seen on our jars is drawn from the classical painting techniques and is a visual representation of the miles we travel beekeeping and of our time on the road to bring you the best. 

What makes a honey a good medicinal honey?

Antibacterial compounds

Low moisture

Honey with a high moisture content can ferment. We use a refractometer to measure the moisture content and ensure it's in range.

Clean production

Hazard Analysis Critical Control Point Methodology (HACCP) allows the factory to keep an eye on risks that could make food product inedible, ensuring safe, consistent food product.

Low temperature process

At high temperatures, honey quality deteriorates and becomes dark, bitter and devoid of enzymes. Keeping the honey cool helps us to keep it fresh.

Contaminant Free

Each season, we test the honey for any sign of impurity, including for agricultural residues, C4 sugars, heavy metals and veterinary chemicals. We only sell product that meets our quality standard.

Soft Set or Liquid

Good honey is one of two things. Pure liquid, or soft set and creamy. There is no middle ground. Honey is largely glucose means that when the glucose sets solid, it changes texture. We can control the process of crystallisation to create a beautiful soft set honey.

Reproduceable results.

Good honey can be tested, it's medical benefits measured and results demonstrated independently.

Good record keeping

Each batch of product is traceable back to the source. We know where it came from, what it is, when it was made and where it has gone. This allows us to keep track of products and monitor for the future,

AMHA Certified Quality

The AMHA Mark of Authenticity is based on scientific research and testing protocols to ensure. honey which carries these Marks are pure, natural, 100% authentic Manuka honey, produced in Australia.

Products licenced to use the AMHA ‘Mark of Authenticity’ on products that have been independently tested to meet the strict criteria for defining Australian Manuka.

The strength of the honey is shown by the MGO rating on the jar.

  • Ben Brown

    Ben is the founder and head beekeeper. Ben can be found in with a smoker in his hand and his trademark Akubra hat. Beekeeping since he was a child, Ben has worked in the industry for over 20 years.

    Ben is an expert queen breeder and has experience in the handling and export of honey, live bees and equipment.

  • Andrew Robinson

    • Andrew brings detailed knowledge of food production and Quality Control, with a depth of commercial and cultural experience in international trade.
    • Educated with a Degree in Chemistry from the University of Otago, Andrew studied Manuka honey during his undergraduate work and became fascinated by it's antibacterial effects.
    • Andrew has also completed the Project Management Body of Knowledge (PM.BoK) from the Project Management Institute and attained a Certificate in Negotiation Essentials from Harvard University Law School.
  • Steven Xu

    Steven Xu is responsible for Business Development and Finance.

    Steven hold an LLB from the University of Melbourne and has worked as a Senior Consultant at Deloitte for over a decade, working across C-Level executives in ASX 100 companies.

    Steven brings high level experience in developing strategy and has well established relationships with trading partners in China, Japan and Hong Kong.
